Carrot Coriander
       Soup

Preparation time 10 minutes.
Cooking time 40 minutes
Serves 4

Ingredients

1 oz butter
1 medium onion, chopped
1 lb carrots, peeled and chopped
1 large potato, peeled and chopped
1½ pints chicken stock
1 bay leaf
Salt and freshly ground black pepper
1 tsp dried coriander
¼ pint single cream

Method

Melt the butter in a saucepan. Add the onions, carrots, coriander and potato.
Cook over a low heat until the onion is soft, not brown.
Add the stock, bay leaf, salt and pepper.
Bring to the boil, cover and simmer for about 30 minutes until the vegetables are tender.

Remove the bay leaf. Liquidise until smooth. Return to the pot and add the cream.

Serve with fresh crusty bread.
