HINT: Fat & Oils
- Fat splatters? A
dash of salt will usually stop fat from splattering.
- To freshen homemade cookies, put a slice of fresh white bread in
the cookie container.
Substitute APPLESAUCE for OIL
You may substitute up to 50% applesauce in place of oil when you
bake to reduce fat content, 1 c. oil called for in recipe = 1/2 cup applesauce.
HINT: Sugars - Sweeterners
- Store Brown Sugar in an airtight
plastic container, to soften brown sugar that has gone hard, just add
a slice of fresh white bread to the container for a few hours, when
sugar is soft remove the bread slice.
HINT: Dairy
- Whipped Cream, Sweeten your whipped
cream with icing sugar instead of granulated sugar. Much fluffier
& holds it's shape.
HINT: Eggs
- How to tell if an egg is raw or hard boiled.? Try spinning
the egg, if it spins it is hard-boiled, if it wobbles it is raw.
- How to tell if an egg is fresh. Place the egg in a bowl of cool
salted water, if the egg is fresh, it will sink to the bottom. If it
does not sink, but rises to the top, then toss it in the garbage.
- The shell of a fresh egg is rough and dry looking, an old egg is
smooth and shiny
- Always salt your eggs after cooking or they will be tough.
- Egg whites: add 1 tsp of cream
of tarter to the beaten egg whites, they will be fluffier &
increase in volume
- Peeled Hard Cooked Eggs can be kept in
the fridge for 2 - 3 days if you cover them with water.
- Eggs For Baking, should be at room
temperature. Put the cold eggs in lukewarm water for
about 5 minutes.
- Boiled Eggs? If you are
boiling eggs that will sit in the fridge until use, place a few drops
of food colouring into the water, everyone in the household will know
that they are the boiled ones.
- Peeling Boiled Eggs? Your hard
boiled eggs will peel easily when cracked and placed in cold water
immediately after taking them out of the hot water.
HINT: Baking Powder
- To check and see if the baking powder in
your pantry is still active, stir 1 tsp into one-third cup hot
water. There should be immediate vigorous bubbling. If no
bubbling or bubbling is sporadic, the baking powder is past its prime.
- Homemade baking powder starts to fizz
and release carbon dioxide the minute it is added to liquid, it is
very important that the oven be preheated and baking pans be ready
before mixing batter. Mix quickly and put in oven right away.

excellent for thickening gravy, soups etc. it doesn't make lumps like flour
