There is no better gift to give this Holiday Season than one that keeps on giving. Consider gifting your loved one with a copy of Angel's Celebrity Charity Cookbook. Your donation will bring smiles to many children while it gives your cherished loved one a gift they will treasure.
Angel's been busy baking for guests who visit this Holiday Season. Here are a few recipes from cookies that she made yesterday. To see pictures of the cookies visit Angel's Celebrity Charity Cookbook on Facebook.
Peanut Butter and Chocolate Cookies
1/2 cup butter, softened
1/2 cup smooth peanut butter
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1 3/4 cups all purpose flour
1 tsp baking soda
6 tbsp granulated sugar (set aside to roll cookie balls in)
48 chocolate candy kisses unwrapped (set aside to top cookies after baking)
Preheat oven to 350 F. Mix together butter, peanut butter, brown sugar, granulated sugar, egg, vanilla and salt, beating until fluffy. Add flour and baking soda, beating until blended. Shape rounded teaspoons of dough into balls and roll into sugar to coat. Place rounded cookie dough balls 2 inches apart on ungreased baking sheets. Do not flatten them. Bake 8 minutes, After removing from oven immediately top with a chocolate candy kiss, pressing it firmly into the center of the cookie. Quickly remove cookies from pan and place onto cooling racks. This is an important step or they will continue to bake, and will stick to the baking pan, thus giving you a drier cookie rather than a moist chewable cookie. The chocolate kisses will soften from the heat of the freshly baked cookie, but retain their shape, and will harden in place once they have cooled fully. Let them sit until the chocolate has hardened before storing or freezing the cookies. These freeze very well which makes them an excellent one to bring out when guests stop in for a visit. We used milk chocolate kisses as well as cookies and cream chocolate kisses in our most recent batch. Makes approximately 48 cookies. Check out Angel's Celebrity Charity Cookbook page on Facebook for pictures of these incredible cookies.
Danish Butter Cookies
1 cup butter softened
1 cup sugar
1 egg
2 cups all purpose flour
30 candies or marashino cherries, cut into halves
Preheat over to 350 F. Beat butter, sugar and egg until fluffy. Add flour, in 1/2 cup increments, beating until blended. Place dough into a cookie press or large pastry bag fitted with a large open star decorating tip. Pipe dough onto 1 1/2 inch cookies, 2 inches apart, on ungreased baking sheets. If you find that the dough is too soft and isn't retaining it's shape when piped onto the sheets then consider adding a few more tablespoons of flour into the dough. Top center of each cookie with a cherry half, pressing it in lightly. Bake for 7 minutes. Cookies should not brown on top and should be lightly golden on edges and bottoms. Immediately remove from baking pans and place onto cooling racks. These cookies freeze well and are very much enjoyed by all of our guests. Tip: if you use marashino cherries, rather than candied cherries, they will need to be drained well so that the syrup does not run all over the cookie tops while baking. Makes approximately 60 cookies. Check out Angel's Celebrity Charity Cookbook page on Facebook for pictures of these cookies.
If you check out Angel's Celebrity Charity Cookbook on Facebook you will be able to see pictures of the Mini Graham Wafer Candy Houses and other decorations that Angel has been busy making as holiday decor. She also spent hours writing out cards to give to those who helped to make Angel's Celebrity Charity Cookbook a reality this year. These awesome folks will also receive a hand made gift from Angel this Holiday Season.

We wanted to make muffins this morning and couldn't find a recipe that we had all the ingredients for, so we invented our own. Angel chose many of the ingredients and the muffins turned out moist and wonderfully delicious. We hope you enjoy Angel's recipe.
Angel's Blueberry Banana Bran Muffins
3 cups all purpose flour
3 cups Fibre 1 Cereal ~ Oat Clusters
3 tsp baking powder
3 tsp baking soda
1 1/2 tsp salt
5 tbsp cocoa
1 cup butter or margarine, softened
1 1/2 cups granulated sugar
6 eggs ( we used farm fresh duck eggs)
9 over ripened bananas (blackened skins)
4 cups frozen blueberries
Measure the first six ingredients into large bowl. Stir to combine. Make a well in the center.
In a smaller bowl, cream butter, sugar, and two eggs until blended. Beat in the remaining eggs.
Mash the bananas in separate bowl.
Mix all ingredients into the well. Fold batter to stir, ignoring lumps.
Fill greased muffin tins 3/4 full. We recommend you use a black muffin tins, if possible, for better baking.
Bake at 375 F for 20 minutes then lower temperature to 350F for 5 minutes.
Remove from oven when muffin tops bounce back after being poked with your finger. Let cool for 5 to 10 minutes before removing from tins. Makes 3 dozen muffins.
If you bake Angel's muffin recipe, and enjoy it, please let her know by emailing her at awesomeangel@shaw.ca

Angel has decided on her next project to help sick children. She is going to create a series of "Going To The Hospital" books that focus on the pediatric wards of three of the Island hospitals (Port Alberni, Nanaimo, Victoria) as well as the various medical departments such as lab, x-ray, ultrasound, eeg, etc. She gets to start doing photography today and/or tomorrow at Victoria General Hospital. Once we have a few templates made we will then look at printing costs and search for sponsors or create fundraisers to cover the costs so that the books can be free for hospitals to lend or give out to their pediatric patients. I made a series of doctor/hospital books for Angel when she was younger as she was highly anxious of every medical procedure she had to endure. We read them at home a lot in preparation and it helped to ease the fears immensely. She now wants to take that same idea, with some expansion, and share it to help other kids. It's a very awesome idea and could help so many children and families.

A few weeks ago we read an article in our local paper about Amber who is a 9 year old Alberni Valley girl. Amber suddenly became very sick in late January and was airlifted to BC Children's Hospital. Angel wanted very much to help Amber and her family. Last week Angel teamed up with the following people and held a coin collection for Amber at the Alberni Valley Bulldogs home game. It took several hours to sort through the coins and roll them before taking them to the bank yesterday to deposit into Amber's account. It was time very well spent and we enjoyed watching the Olympics and cheering on Canadian athletes while we processed the coins.
Thank you to Quality Foods, Smitty’s Restaurant, The Dave Kozegi Team, The Alberni Valley Bulldogs and to all of the awesome hockey fans for supporting Saturday night’s fundraiser for Amber Humphries-Jones. Together we raised $681.70 for Amber.
Please keep helping Amber by dropping your coins off at the Alberni Valley Times office.
Thank you.
Love Angel
Angel also sends out a huge THANK YOU to Kevin Ross, Mark McMillan and Adam Hout for the red roses, the large autographed team picture and the beautiful fuzzy 'bulldogs' bathrobe that they presented to her at the Alberni Valley Bulldogs Year End Banquet last weekend. Very cool.....very very cool guys.

The following news release was written by Kristi Dobson, freelance reporter, was sent to local and provincial media yesterday.
Angel Magnussen, Port Alberni's Variety girl, is ready to take her newly-released cookbook from the press to the streets to raise money for her favourite charities.
The "Celebrity Charity Cookbook" features a variety of people including celebrities, politicians and local community heros. Each were asked to submit a recipe and include a personal biography and story behind the recipe. It quickly grew from a simple cookbook to a coffee-table book and special keepsake.
Included are stories from people who make a difference in our community, children who have overcome challenges and tributes to loved ones who have passed on.
The first official launch will take place Tuesday night at the Alberni Valley Bulldogs game, where Angel will have her Variety table set up.
As a hobby, Angel loves to bake and the idea came about while she was in the kitchen with her caregiver about a year ago.
"Angel decided then that she wanted to make a cookbook," said her mother, Cheryl Magnussen. "The two of them talked about it and by the time I got home, they had it all hatched out."
Born with a number of medical conditions, Angel has never let her challenges get in her way. She loves doing things for others and cooking gives her great satisfaction. Feeding others is a way she can give of herself. She often volunteers at Echo Village where she conducts "Baking with Angel" sessions.
Recipes cover everything from salads to desserts and include such items as Buffalo Wings, Smoked Salmon Spinach Salad, Chocolate "Muff" Cakes, as well as a full Mexican fiesta. The result is an interesting and unique cookbook with a difference.
The aim is to raise funds to contribute to Variety, The Children's Charity, as well as stock pediatric wards of three Vancouver Island hospital pediatric wards with toys and games.
Magnussen feels such distraction items are necessary to help families cope with the emotional roller coaster of a child experiencing hospital visits.
"The hospitals have no money for these kinds of things," said Magnussen. There are no child life specialists locally or anyone to help distract a child who is going through scary tests, admissions or an emergency."
She hopes that by equipping pediatric wards with toys and games it will help families going through a crisis in a small way.
"It is hard enough in that kind of situation for a parent to hear and understand what the doctors are saying, so this will help the families cope and better support their children," said Magnussen.
Following Tuesday night's Bulldogs game, the Magnussen's will be hosting book signings at Home Hardware on Saturday, January 23 from 11:00 am to 2:00 pm and at Quality Foods on Saturday, January 30 from noon until 3:00 pm. Both stores will then stock the book for sales.
A sneak peak into the book reveals the following recipe submitted by Travis Cross Olympic Wrestler and Fire-fighter, who shared his coach's enormous soup dish, inspired and created in the kitchen of the fire hall.
Coach White's Chicken Soup
Recipe for 40 liters
2 kilos onions
100 ml hot sauce
10 cloves garlic
10 tbsp oregano
3 bunches celery
4 tbsp basil
1 kilo carrots
3 tbsp sage
1 head cabbage
1 tbsp rosemary
1 head cauliflower
100 ml dill seed
60 small brussels sprouts
500 ml oxo chicken bouillon
100 oz can diced tomatoes
150 ml olive oil
2 bunches parsley
2 liters water
250 ml soy sauce
2 roasting chickens
Roast chicken in oven until completely cooked. Separate the chicken from the drippings to cool and then chop up meat. Cool drippings and then place if fridge so that all the fat can be skimmed. Hold drippings and meat in fridge for later.
Chop up onions, carrots, celery, cabbage and garlic into spoon size pieces. Sauté onions in olive oil and add celery and cabbage. Add garlic and 2 liters of water. Cut out stems of cauliflower and chop up stem only. Throw florets in whole as they will breakdown on their own. Clean brussels sprouts and throw in the pot.
Add the whole can of tomatoes and all other spices and ingredients.
Bring to a boil and then simmer for 4 hours.
Add chicken drippings and meat and remove from heat.
Portion into appropriate food containers and allow to cool completely. Then label and freeze.
This will provide a concentrate which when thawed and reheated will require additional water and chicken bouillon to be added.
*Note: If you put in too much bouillon at the beginning of the process the soup will wind up too salty. Add bouillon to taste prior to serving.
Pasta noodles can also be added if desired for a chicken vegetable noodles soup prior to serving.
This recipe will feed 120 people or 30 wrestlers. Enjoy!
(The book also contains a color photograph of Travis, his biography and a short story behind the recipe....but you'll have to buy the book in order to see the rest of it.)
